Getting rid of Hangouts on S3

I don't think it comes pre-installed. And yes, it is safe to delete. You can find it in your app drawer if it is not on your homescreen.
 
I thought Google Talk (which is what Hangouts replaced) was pre-installed? Once you uninstall the updates to Hangouts you should be able to disable Google Talk.

I can't even find it.
Settings -> More (if using the Tab view) -> Application manager -> swipe to the ALL tab -> scroll down until you find Hangouts or Google Talk.

com.google.android.talk is this it? There's no Hangouts listed

No - it would be listed as Hangouts or Google Talk.
Guess you don't have it installed (shrug).
Are you running the stock 4.3 firmware?
