I'll start by saying what was my problems and what simple fixes I'm using and We have different phones but slightly the same functions. I had this problem on the LG stylo 3 boost
My generic headphones got washed with my laundry but it still worked. Later I found that Google Assistance was on display in my pocket. Long story-short. Although it had no mic it was somehow sending the command to run Google's Voice/Assistance. So I got rid of those headphones and the constant openings slowed down. It could be your problem I don't know.
- I need to know what your doing that cause it to open. Is your phone screen on or off. What functions or shortcuts you might have on.
Now, Good news is we found the problem and I may have a small fix. The bad news is, Its the home button. The function is permanent there isn't an option in settings to switch off this feature. There are other shortcuts you could control but this one inparticular cannot be turned off. Obviously the home button is the cause and it's a big problem for customers who don't want this feature on. Which is a big disappointment and it's permanent unless. Development teams for your carrier, noticed and patches the issue. Your next phone update to your profile will fix the problem, "if they noticed".
So I need my phone to stay off unless I power it on manually easy right. Not quite. For me that is.
Moving on to my other problem the "pocket bandit". I know it sounds crazy when I say, "your pockets... might be the cause of your Google Crisis" to be honest. My pocket for me was definitely the cause for this problem. My phone was setup to sleep and wake with knock-on or power tap, (lock screens and passwords are a tiny bit of a time waster if you ask me) which later, became my solution. In my case powering on my phone would bypass my lockscreen and it'll wakes up with my home screen already displayed. Now with my home button exposed My pocket will then find a way to hold the home button down long enough to launch Google Assistance.
When I noticed this issue. I simply turned off knock-on (it allows the user to power on or off there screen by quickly tapping your screen twice) it was part of the problem. So now thats off and my power button embedded lower than the surface of the back of my phone.
Now we have The volume-keys shortcut functionality available its default setting are on.
- I had no Idea they could turn my screen on by launching the camera app and the other launches my capture+ in short turns my phone on. Problem? ahh yeah my home button are softkeys it will appear if my screen turns on. and expose the home button, humbug.
Thus concluding my simple fix with trial and error I found the Lockscreen feature could fix my home button crisis to help keep my phone off and help stop app from launching in your pocket. For me it's solved and working so much better now. My setting has the swipe to unlock feature right and it's okay for now. Unless my pocket figures that out too. Then I'm forced to set a password. To save time here remove the shortcut apps on the lockscreen. I hate passwords by the way they take to long and I turn my phone on and off at least 30 times a day maybe more.

I don't know if your phone has hard-key or soft-key function "meaning are the buttons digital like mine or is it hardware an actual button. Hell I don't even know if having your screen disables this function you know what I mean. It could be a "bad model" like I mentioned before. I mean the Scripts writen by developers when a fraction off, could lead to many problems. The OEM didn't match compatibilities in the phone model's Hardware "Galaxy s6" perhaps, volume down button brings up the task menu, cant login to Google playstore, apps not running as they should.. you get the picture
I do not know if this helps you or not. I took long to explain because this might help other android users who don't have a clue whats happening.
Me and my LG stylo3, Want to apologise for the introduction and long stories. I felt it was necessary to teach a little rather than to give you my solution off hand. Every android device differs know your average android users. My friends struggle trying to use Googles YouTube app you know.
**Google needs to stop supporting phone companies a bit. Developer's OEM sucks straight up. Don't bother blaming Google for this, just there greed. It's the manufacturer who wrote the scripts on your "Galaxy s6". I'm sure Google signed a contract to someone for there apps to be used***
