how do i "reset" my "open always with" choice for a particular file type??

Settings/Default Apps (on newer OS) Settings/Apps/All (select the app and click Clear Defaults on older OS)

Or Default App Manager will bring you there by simply choosing the function (they're all listed in the one app) and "Clear Default".
