I have noticed that on my pixel 3XL, the notch space is reserved for notifications, and the app real estate only comes up to the bottom of the notch anyhow. It's not like than that is getting in the way or being obtrusive to what I would normally see in a regular app.
I don't quite understand what the fuss is. Also, if you're watching a video in the proper aspect ratio it won't flow past the notch anyhow - Unless you zoom in.

I'm sure they will patch the software if their are enough complaints.
After some research, I found the fairly popular app "Nacho Notch" does just this - black out the notification bar notch area to hide it without wasting screen real estate.
I found myself wondering why Google didn't setup their hide notch function this way from the get-go and I think I know why. This reminds me of how when the Galaxy S8 initially launched, there was an option to black out the on-screen navigation bar and have white buttons on it. Not even a week after launch, people were complaining about burn-in, and so Samsung released a patch that removed the option to black out the notification bar, and you only use white or various other off-white and pastel color options as notification bar colors.
The point is that a high contrast blacked out notification status bar withe white letters will probably cause burn-in, and Google is trying to get ahead of this issue...especially after some burn in complaints on the Pixel 2 XL last year. Having the notification bar area change colors and whatnot as you use different apps will prevent burn-in.

Well no I don't think disabling the notch is a good idea. Disabling it wastes too much screen real esate and keeping it on but blacking it out with nacho notch will cause burn-in. If you get the 3 XL, you best option is just to deal with a silly looking unbalanced phone.
If I really wanted a phablet, I'd pass on the 3 XL and either get the S9+ for $200 less if you want a good camera, or get the OnePlus 6t for $350 less if you want a stock phone with quick updates. Luckily I don't like phablets so the Pixel 3 will suit me well.
I love the Pixel phone and the cameras seem great, but "dealing with" that silly looking notch just isn't worth it when you can get the S9+ or OnePlus 6t for $200 and $350 less, respectively.
People in this forum will apologize over and over for Google, but I'm at least glad that most major tech reviewers aren't falling for this. Google listened to a lot of people's complaints about the Pixel 2 XL, so it'd be better to just vote with your wallet and give feedback rather than to apologize constantly.
