You won't on this phone either until VoLTE is rolled out which I wouldn't expect this year from sprint. The s3 could because it was a non "Sprint Spark" device. Every phone Sprint has been releasing for the last couple years has been a Triband "Spark" device and these all can't do simultaneous voice and data for technical reasons I won't bother with for brevity. Just know that any Sprint phone to have come out in the last ~2 years and any device that's going to come out from here on out will not support simultaneous voice and sata on Sprint until they launch VoLTE which is at least a year out.
GSM networks like ATT/Tmobile have the technology to do voice/data built in at the network level where Verizon and Sprints 3G networks do not support voice/data. Since LTE is a GSM technology Verizon can do it when on a VoLTE call and many of Verizons and non Spark Sprint Android phones support it as long as you are connected to their LTE network even if the call is going over 3G by having 2 antenna paths, one for calls and one for data where Sprint Spark phones only have 1 antenna path and it can be either calls or data.
Sounds like I made a good choice staying with AT&T for 20 years.

Verizon - It will work with WiFi or VoLTE (Advanced Calling)
Yeah, the S5 has two radios, now that Verizon has voLTE they only have their phones made with one radio.I'm using an S5 on Verizon, and I am on a call and surfing at this moment. I have verified through Settings-> Advanced Calling that Advanced calling is not active on my line. I don't see why it would be different if I switched to an S6... Is there something particular about the hardware that disallows this?
Oh, yeah... I'm not connected to WiFi.

Older phones (such as the Note 4 / Galaxy S5) have two radios in them. Therefore one can handle the call -- and the other can handle data. In the newer phones (such as the S6) there is only one radio so .. You can only do a call, or data -- not both at the same time -- Except when using "Advanced Calling" since it will use the voice as data so .. technically it is all data.
Which brings up a point. Does my "Advanced Calling" charge my VoLTE against my regular data allocation? I realize that the Vo-anything is actually fairly low bandwidth, but still...
