OK, I'm currently sitting on ThundeROM 1.7 and using Xionia to OC, along with drellisdee's recovery

When I'd checked out the thread for the directions, and tried to run adb reboot recovery through command prompt, both my command window and the phone froze up (had to exit then unplug phone and pop out battery, rebooted as soon as I put it in, but not to recovery mode), so I put it in recovery using the hard buttons. Also, when I went to check Superuser on my phone to see the permissions, it FC's almost immediately upon opening.

I'm not sure how to proceed with this, my ultimate goal is to upgrade to VD and upgrade to 1.8.2, but I'm afraid to do anything right now for fear of bricking myself.

OK, so basically I need to put the latest TR in the root of my phone, then reboot it in recovery mode (adb still is freezing my phone) with the hard buttons, make a nandroid backup, then reboot my phone.

I then plug it in and install the VD update from the LG tool, not OTA. After it gets done, I go back into recovery, restore the nandroid backup I just made, wipe the cache and the dalvik cache, then flash the new TR rom and let the phone boot up.

Assuming I'm getting this right (and can hopefully do without the use of adb), what kind of backup should I make (basic nand, nand +.android_secure, nand & ext backup, all three)??

Also, is there anything I need to do about keeping the Xionia kernel?

The answer to all those questions and more can be found right in the thread i linked you to above. I was just pointing you in the proper direction.
