I've wanted to switch from TouchWiz to Vanilla Android. I really don't like the touchwiz ui. its anonying more than helpful.

You would need to find a ROM that is built on the theory of AOSP (Pure Vanilla Android) or if your device is supported Cyanogen Mod ROMs.....

There is no real way to shut down TW on the device other than switch launchers and eliminate things like TW Calender, TW Launcher, etc. etc...
