You won't be able to do that without root. If you do have root, check out Unicon in the Play Store. It'll apply any icon theme compatible with Nova, Apex, etc throughout your whole system.

Download a KitKat icon pack.
Then download Icon Changer Free.

Or you can PM me, and I can send you KitKat Launcher/Prime apk that does everything the GEL launcher does except "Okay Google" on the home screen.
This apk was pulled from the PlayStore when Google put the GEL launcher in there, because it lets you do things similar to Apex and Nova Launchers.

Root is not always the answer.
This is the first high-end phone I haven't had to root in 4 years.
