First impression: 2.0 is much more attractive and refined then 1.5, but slightly less usable.
But 2.0 is also easier to learn for a new user than 1.5 was. It's just more simple and straight forward.

Wondering now if I should have taken the update now. Figured I would since it was the latest and I got the watch the day the update became available. I guess it's fine to me since I didn't spend any time with 1.5 as I came straight in to 2.0.

I would say yes you should have taken it. I don't have any regrets. Little things are difficult, like putting the phone in theater mode, or getting to you contacts, or changing watchface "complications". But every feature is there. And some things are better, like typing and being able to uninstall apps.
The only thing that appears to be completely missing is the super-brightness mode. I would use that shortcut a lot when trying to see the screen in bright sunlight.

What apps did you uninstall? I've only added apps which probably isn't the best for my battery life. One thing I've noticed and I need some help with this one is, that I'm not receiving my Gmail emails on my watch I've noticed. Is this because of 2.0? How would I go about ensuring my emails are coming through to my watch? In fact I've not received one email?? What am I missing in my settings? I've done something wrong or I've not fully set it up possibly?? Anyone can help me I'd greatly appreciate it.

The way version 1.5 was set up, any app on your phone that had a wear component automatically got installed. There was no way to uninstall an app from the watch and still have it on your phone. I have 11 installed apps in addition to the system apps, but I probably only use 3-5. I haven't uninstalled anything yet, but it's on my to-do list. Here's the list of non-system apps I have right now. You can see the list by going to settings, apps

Are you receiving your emails via your watch? When I had my Moto 360 2nd gen I remember receiving my emails. With this Android watch I've not yet received one email. I'm receiving lots of other things but no emails. I'm about to go back to my Zenwatch apps and check Gmail or check settings. Something either isn't set up fully or is preventing my emails coming through which maybe a blessing as I get a lot of junk email so might be a good thing. Just bothers me that I'm not receiving them. Hopefully I'll get it figured out. I'll have to check into uninstalling some apps too. I know for certain I don't use all of them. I've added a browser and several other like YouTube, Pandora and something else. I don't recall. Thanks for that detailed list you posted.
I just added Android Wear mail app but shouldn't I have been at least receiving my Gmail emails through my watch already. I added two of my several accounts through this app but I have to be missing something as my main Gmail emails should have been filtering through the watch already. Did you have to set this Android Wear mail app up to receive your Gmail emails?

Yes please do. I have checked both my phone which is a Samsung S8 and I've checked my watch and the only emails I'm seeing are the ones where I installed the android Wear mail app. My thoughts were it was automatic or given that I receive Gmail notifications without anything special like you said. Something isn't set up right on my watch for me not to be getting my emails. I'm even getting Instagram notifications so if I'm receiving those then I for sure should be getting my emails. I'm just not sure what I did wrong or didn't do right to not be receiving
Oh you're not? I wonder why we aren't receiving emails? That just doesn't make sense. Hopefully that will change over time but yeah I had to download a email app to get my emails too.
you like 3 steps to shut off the watch? 3 steps to bump up brightness. Everything in playstore sucks. I see no way that 2 is refined. It's a huge step back. Ironically I do get all my notifications including gmail. All I did was clear cache of zenwatch manager and android wear manager.

If you already have a new message notification from Gmail in your notification shade then new messages get added to that notification silently, but I can still swipe through them. If there no Gmail notification in my notification shade then I get a notification pop-up on the watch.
When you put complications on a watch screen now u have to use watchface instead. of zenwatch manager. Very hard to do.
