So I installed the latest update to my Samsung note 2 (huge mistake) now when I go to upload photos it no longer offers "gallery" as an option to get photos from. Now I have to dig through the files to upload. Do I have any options? I am not tech savvy and this has driven me nuts.

Welcome to Android Central! What app are you trying to use to upload photos with? If you open Gallery and select a photo, can you upload or share from there?
Sometimes updates can screw some things up, so it's worth booting into Recovery and trying a cache partition wipe, which won't erase any personal data: Reset: Samsung Galaxy Note II | T-Mobile Support
