So as someone mentioned earlier when I first got my update notification, I rushed and pushed "install", my phone rebooted, and I got an error (exclamation point and android robot)... I then tried to reboot again and it took me to a ClockworkMod screen, which reminded me "hey dummy, you're rooted"... I'm guessing (but not sure) that this is why my update failed... perhaps being on EB13 and being rooted was my downfall...
So after a few attempts at rebooting (my phone finally started acting cool again and rebooted with no problems), I checked and saw that I was still on EB13... I finally bit the bullet and used the method of updating to EC05 listed
here, which allows you to update without losing data.
Ultimately, I knew that this method was available all along (well for a few days anyway) since I saw it announced a little while ago. I guess I just wanted to see if it was still possible for my phone to get an update notification since it had been SO LONG since I had seen one... plus, I wanted to prove that you can still get them even if you update the manual way and are rooted. Using the method listed, I was able to retain my root (Titanium Backup still works and still has super user rights) AND all my data is intact (all my apps are working and the data is still there, with no loss of my Angry Birds progress



)... so to anyone else that is out there experiencing the same problem, check to see if you are rooted (if you aren't sure or **forgot** like me), and feel free to use the method linked from our super AC Epic community.
I am now happy to say that I am STILL rooted, still a Titanium Backup user, and now on EC05... thanks to Paul627g and whoever else helped develop this awesome and super easy (less than 5 minutes) method of updating sans OTA...
