What's your signature plate?

Hmm.... signature dish? That's a rough one. I enjoy creating things that I haven't seen other places, combining flavors that you might not expect to work together. I like to surprise people (in a good way of course lol).

It's a WIP, but cream of mushroom, some golden onion soup, a few cans of water, pork tips, a few slices of bacon, and some chopped celery. Plenty of black pepper, a little bit of Cajun seasoning and set low to simmer for a few hours.

Out of flour for pancakes :'(

Do they have Walmart in Australia?
They actually have pancake batter that you can spray out of a can (like whipped cream) onto the grill, and it tastes just like from scratch. REALLY good.

?? I think signatures are jejune.

Turned out like a gumbo. It was actually very good.

Tonight's dinner, pork chops, mashed potatoes, and cream corn.

I live in Adelaide, and I can say there is no Walmart.

We have Woolworth's/Safeway, Coles, IGA, food land and some more.

Safeway/Woolworth's are the same company? Woolworth's disappeared in the 70's here in America.

(showing my age again) :(

I think they are.
I might be wrong,
Example:
Safeway - Melbourne
Adelaide - Woolworth's

Could be wrong, the logos here are identical

Could be wrong, but you might be right. I'm too lazy to Google it. :)

Sophos, since you're a pro, what do you think is the best way to make homemade pizza, New York style?

Ever since I left New York and moved to Atlanta, I've had a pretty difficult time finding a place that makes pizza the way it's 'supposed' to be made.

Measure the bottom of your oven and then go to a custom countertop store and ask then to cut you a piece of 3/4" granite in the appropriate size. (Or buy a pizza stone.....)

Put the stone on the bottom of your oven and crank it as hot as it will go.

Make some dough... you can find pretty good recipes online. Make some sauce (from FRESH tomatoes), and buy some good quality low moisture & fresh mozzarella.

That's all you really need. Roll the dough thin and keep the toppings simple.

The last place I worked had a wood fired pizza oven imported from Italy... We made some of the best pizza I've ever tasted. I miss that oven so much I'm thinking of building an outdoor model behind my restaurant for use during the summer.
