Hi, welcome !
You can flash any US firmware , but if there's a new update in future might have to flash to that again which is no big deal because it takes 10 minutes and you dont Lose data in the process.
Are you familiar with flashing in Odin?

I have been reading and watching videos on how to use odin, I think I already understand how to install the firmware.

so if i want to remove all at&t applications, can i install the XAA – USA unbranded firmware?

To keep my files I understand that I need the file HOME_CSC but I see that only the normal CSC file appears in the folder.
